Sausage Skillet

Even if you're cooking on the campfire, there are plenty of different recipes available you can use to create tasty, home cooked meals, like this sausage skillet recipe:
Ingredients
- 1/2 pound link sausage
- 1 green pepper, sliced
- 1 large onion, peeled and sliced
- 3 - 4 potatoes, sliced
- salt and pepper
Instructions
- Place all ingredients in a cast iron skillet.
- Set the skillet on the coals on the edge of the fire, or on a grate.
- Stir frequently until the vegetables are soft and the sausage is cooked through.
Camp Stew

Ingredients
- 1 pound sirloin, cut into 1-inch or smaller pieces
- 4 red potatoes, chopped
- 1 red onion, chopped
- 1 - 2 cups diced vegetables of your choice
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 3 tablespoons butter
Instructions
- Melt the butter in the bottom of the pot.
- Add the meat and brown.
- Add the vegetables and continue cooking over the fire until the meat is cooked through and the vegetables soft.
Foil-Wrapped Fish

Ingredients
- 1 pound skinned and boned fish
- 1 onion, sliced
- 1 teaspoon thyme
- 1 tablespoon garlic, minced
- Salt and pepper to taste
Instructions
- Place the fish in the center of a sheet of aluminum foil.
- Place the onions and seasonings on top of the fish.
- Fold the aluminum foil up around the fish to seal.
- Place the packet on a grate or in the ashes at the edge of the fire.
- Cook for 30 minutes, or until the fish is cooked through.
- Use care opening the packet.
Kebabs

Ingredients
- 1 pound chicken, cut into 1-inch pieces
- 1 large yellow or red onion
- 1 summer squash
- 1 zucchini
- 1 bell pepper
- 1 cup lemon juice
- 1/2 cup olive oil
- Salt and pepper
Instructions
- Soak a packet of bamboo skewers in water.
- Combine the lemon juice and olive oil in a large container and place the chicken in it to marinate for one hour.
- Slice vegetables.
- Thread pieces of chicken, along with pieces of vegetable, onto each skewer.
- Set the skewers down on top of a grate over the fire.
- Cook over the flame for 10 minutes, then turn the skewers and cook for 10 to 15 additional minutes.
Red Potatoes

Ingredients
- Approximately 20 new red potatoes
- 1 packet dry Italian dressing mix
- 3 tablespoons olive oil
- Fresh basil or parsley, chopped (optional)
Instructions
- Place the potatoes in a bowl and toss with olive oil and dressing mix.
- Place the potatoes on a sheet of aluminum foil and fold the foil over to seal them inside.
- Place the packet on the grate of a grill or in the ashes of a fire for approximately 40 minutes.
- Use caution opening the packet.
- Sprinkle with fresh basil or parsley if desired.
Spanish Tortilla

Ingredients
- 1 medium potato, peeled and diced
- 8 eggs
- 1/2 cup milk
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- Pepper to taste
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 red pepper, diced
- 1 small zucchini, diced
- 1 tablespoon garlic minced
- 1/2 cup shredded cheddar cheese
Instructions
- Heat the oil in a skillet and add the potatoes.
- Brown the potatoes, stirring ocassionally until tender.
- Add the rest of the vegetables to the potatoes.
- Mix the milk, eggs and seasoning together and pour over the potato mixture.
- Top with cheese.
- Place the skillet on the edge of the grate or on the edge of the fire and cook for 1 hour, or until the eggs are set in the center.
Balsamic Chicken Skillet

Ingredients
- 1 pound chicken breasts
- 1/4 pound green beans
- 1 large carrot
- 1 small eggplant
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
Instructions
- Place the chicken breasts in the balsamic vinegar and marinate for up to one hour.
- Slice the carrot and eggplant into 1/2-inch pieces.
- Heat the olive oil in a skillet in the ashes of the fire.
- Add the chicken and vegetables.
- Cook over the fire for 30 to 40 minutes, turning the chicken breasts halfway through.
Easy Egg Scramble

Ingredients
- 1/2 cup vegetables (green peppers, onion, tomatoes, diced)
- 1/2 cup meat (ham, bacon, sausage, diced)
- 1/8 cup shredded cheese
- 2 eggs
- 1/2 tablespoon milk/cream
- 1/4 teaspoon butter
- Salt and pepper
Instructions
- Place a skillet on the edge of a fire or grate.
- Melt the butter in the skillet.
- Add the vegetables.
- Sauté until peppers and onions are crisp, stirring as needed.
- Stir in meat.
- Pour in the eggs and milk.
- Stir the eggs with a wooden spoon until everything is cooked through.
Baked Apples

Ingredients
- 6 Granny smith apples
- 1 stick butter
- 1/2 cup brown sugar
- 1 small bag cinnamon candies
- 1 small bag caramels, unwrapped
- Water
Instructions
- Peel, core and slice the apples.
- Place the apples in a dutch oven with enough water to cover them.
- Cook until the apples are soft.
- Drain off the excess water.
- Add the butter, brown sugar, candies and caramels and return the pot to the fire.
- Cook until the candy has melted, mashing the apples with a fork to combine.
Banana Boats

Ingredients
- 1 bunch ripe bananas
- Chocolate chips
- Peanut butter chips
- Mini-marshmallows
Instructions
- Slice each banana lengthwise with the skin still on.
- Open the bananas up slightly and place each banana on a sheet of aluminum foil.
- Fill with chocolate and peanut butter chips and mini-marshmallows.
- Wrap each banana up in the aluminum foil and place in the ashes of the fire for approximately 10 minutes.
- Use care unwrapping the foil.
